Gluten Free Blueberry Galette

Gluten free, refined sugar free, blueberry galette is what I was craving so I made my healthy version and it did not dissappoint! Blueberry is my favourite pie flavour!

DOUGH INGREDIENTS

  • 1 cup sprouted buckwheat flour
  • 1 cup arrowroot
  • 1 cup organic brown rice flour
  • 1 tsp xantham gum
  • 3 tbs coconut sugar
  • 1.5 cups Alpha Health Products DME organic coconut oil
  • 2/3 cup ice water
  • Pinch of salt

DIRECTIONS

  1. Mix dry ingredients together then add coconut oil and mix until crumbly.
  2. Add water and mix until dough forms then freeze for 15 minutes.
  3. Roll it 1/3 inch thick out onto a baking sheet lined with parchment.

 

FILLING INGREDIENTS

  • 4 cups frozen organic blueberries
  • 2 tbs arrowroot starch
  • 1/4 cup maple syrup
  • Pinch of salt

DIRECTIONS

  1. Cook on stove until dissolved and bluebrries are soft.
  2. Pour over dough leaving 2 inch of dough around the edge.
  3. Fold the dough over the filling pinching all the seems to prevent holes.
  4. Brush douhb with milk of choice and bake at 375 for 40 minutes or until done.
  5. ENJOY!
