PALEO SUPERFOOD COOKIES

My kids are ALWAYS looking for snacks throughout the day and I am not one to throw packaged snacks at them too often. I love creating recipes that not only taste delicious (kid-approved) but are also great for meal-prepping and that don’t take up a lot of time! I love this recipe because its packed with super-foods and ingredients that will nourish my kids while filling up their little tummies. They are Vegan high fiber, grain-free, paleo, and are packed with nutrients!

INGREDIENTS:
3/4 cup raw cashews or macadamia nuts
1.5 cups raw almonds
1.5 cups unsulphured coconut flakes
1/2 cup sunflower seeds
1 cup medjool dates, pitted
1/2 cup dried unsulphured apricots
1/4 cup chia seeds
2 tbs water
1 tbs ceylon cinnamon
2 scoops Ancient Nutrition Multi-collagen (optional)
Pinch of sea salt

DIRECTIONS:
Blitz everything up in a food processor until the mixture comes together. Add more water if needed to hold all the ingredients together! You want it to be sticky enough to hold together without being super mushy.  Form into balls and place on a baking sheet lined with parchment. Flatten the cookies until thin (1/4 in) and bake at 300 for 15 minutes or until golden brown. Let cool completely and enjoy ❤

  1. Do you sprout any of these ingredients before adding? Or would baking just nullify those extra nutrients?
