Paleo Double Chocolate Muffins

Introducing you to my paleo, gluten-free, refined sugar free, Double Chocolate Muffins! They are SO moist, fluffy, delicious and super clean! Talk about the perfect dessert  that the whole family will love. 

INGREDIENTS:

  • 3/4 cup unsweetened applesauce
  • 1/2 cup coconut sugar (omit for low sugar and instead add 20-40 drops liquid stevia to taste)
  • 1/4 cup honey
  • 2 large egg whites (you can do 3 egg whites for more protein, especially if you omit the 1/2 cup sugar)
  • 3/4 cup coconut yogurt (or greek yogurt)
  • 2 tsp vanilla
  • 1 cup cassava flour
  • 1/2 cup unsweetened red cocoa powder
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3/4 cup Lily’s Sweets chocolate chips

DIRECTIONS:

  1. Combine wet ingredients together and mix well.
  2. Add in dry ingredients and fold until combined.
  3. Fold in chocolate chips.
  4. Bake in muffin trays at 425 for 5 minutes, then reduce heat and bake at 375 for 13 minutes or until done.
  5. Let cool completely.
  6. Enjoy!

  1. Hi Marla! Thank you for your incredible work! It has been such a blessing to me and for me! On this Paleo Double Chocolate recipe, I see you have 1/2 cup of sugar. What kind of sugar to use?
