These buns are light, fluffy, very high in fiber and are PERFECT for BBQ season and for those of you who cant have wheat or grains in general! They are so easy to whip together, are yeast-free, grain-free, paleo and delicious! The high fiber content is great for lowering cholesterol, balancing hormones and cleansing the colon. They can help relieve constipation as well… who doesn’t want that!?

7.5 tbs ground psyllium husk
2 cups almond flour
3 tsp baking powder
1.5 tsp sea salt
3 tsp apple cider vinegar
1.5 cups boiling water
4 Large eggwhites (save the yolks for brownies)
3 tbs sesame seeds for topping (optional)
Preheat oven to 350 degrees. Mix dry ingredients together in a stand mixer, then add the egg whites and vinegar and mix well until combined. Pour boiling water over the dough while it is mixing/beating and mix JUST until it is combined (do not overmix). Let dough sit for a few minutes to absorb the water then stir. Grease your hands with olive oil and form 8 balls of dough and place them on a baking sheet lined with parchment. Top with sesame seeds and bake in the oven for 40 minutes or until golden brown and cooked through. ENJOY!
