These blondies are SO EASY to make and use ingredients you already have on hand. They don’t use any flour so they are naturally gluten free and they can be made sugar-free too! You can also use any nut butter of choice to make these delicious blondies fit into any diet you’re currently on. They taste so delicious and are chewy and are so rich…. essentially everything you want a blondie square to be!
INGREDIENTS
- 1 cup organic smooth peanut butter (or cashew butter is also amazing if you’re avoiding peanuts)
- 1/3 cup maple syrup, yacon syrup or raw honey
- 1 whole free range egg
- 1/4 teaspoon sea salt
- 1/2 teaspoon baking soda
- 1/2 cup Lily’s dark chocolate chips (you can also add walnuts or any other mix ins or toppings)
DIRECTIONS

Preheat oven to 350F and grease a 9″ square pan with coconut oil, then line with parchment paper.

In a medium bowl, combine the peanut butter, maple syrup, egg, salt and baking soda and stir well, until a thick and sticky batter has formed. Fold in the dark chocolate chips,

Use a spatula to pour the batter into the prepared pan, then smooth the top. Sprinkle coarse sea salt over the top of the batter to add more flavour!

Bake at 350ºF for about 20 minutes or until the top is a lightly golden brown. Let the blondies cool completely to set before cutting into squares.
