Are you looking for some new, simple, fresh, delicious and HEALTHY summer salad recipes!? Here are my current favourite top 3!
*These recipes were inspired by Leslie Langevin cookbook and altered to my liking.*
Apple Cabbage Salad
- 2 large carrots peeled and grated (use a veggie peeler to make the threads)
- 1/2 a head of purple cabbage THINLY sliced
- 2 gala apples thinly sliced
- 1/4 cup raw pepita seeds
- juice if 1/2 a large lemon
- 1/2 tbs maple syrup
- 1 tbs olive oil
- salt and pepper to taste
- Add all the veggies to a large bowl toss in lemon juice
- add the remaining ingredients and mix until well combined
- Store in the fridge for up to 3 days
Vegan Black Bean and Mango Salad
- 1 cup cooked black beans (soak overnight then cook)’
- 1-2 mangoes diced
- 1 large orange pepper (optional), diced (avoid if you have autoimmune issues)
- 1 scallion thinly sliced
- 1 jalapeno minced
- Juice of 1 large lime
- sea salt to taste
- Combine all the ingredients in a large bowl and toss well until fully coated
- Store in the refrigerator for up to 3 days and enjoy!
Mediterranean Cucumber and Dill Salad
- 1 large organic cucumber sliced
- 1/5 cup finely chopped dill
- 1/2 a red onion thinly sliced
- 2 tbs goat yogurt (or coconut yogurt if vegan)
- juice of half a lemon
- sea salt to taste
- 1 clove grated garlic
- 1 tbs olive oil
- Add all ingredients together and enjoy!
- It should be goo in the fridge for up to 2 days.
