Healthy Vegan Summer Salads 3-Ways!

Are you looking for some new, simple, fresh, delicious and HEALTHY summer salad recipes!? Here are my current favourite top 3!

*These recipes were inspired by Leslie Langevin cookbook and altered to my liking.*

Vegan Apple Cabbage Salad

Apple Cabbage Salad

  • 2 large carrots peeled and grated (use a veggie peeler to make the threads)
  • 1/2 a head of purple cabbage THINLY sliced
  • 2 gala apples thinly sliced
  • 1/4 cup raw pepita seeds
  • juice if 1/2 a large lemon
  • 1/2 tbs maple syrup
  • 1 tbs olive oil
  • salt and pepper to taste
  1. Add all the veggies to a large bowl toss in lemon juice
  2. add the remaining ingredients and mix until well combined
  3. Store in the fridge for up to 3 days

Vegan Salad

Vegan Black Bean and Mango Salad

  • 1 cup cooked black beans (soak overnight then cook)’
  • 1-2 mangoes diced
  • 1 large orange pepper (optional), diced (avoid if you have autoimmune issues)
  • 1 scallion thinly sliced
  • 1 jalapeno minced
  • Juice of 1 large lime
  • sea salt to taste
  1. Combine all the ingredients in a large bowl and toss well until fully coated
  2. Store in the refrigerator for up to 3 days and enjoy!

Cucumber Dill Salad

Mediterranean Cucumber and Dill Salad

  • 1 large organic cucumber sliced
  • 1/5 cup finely chopped dill
  • 1/2 a red onion thinly sliced
  • 2 tbs goat yogurt (or coconut yogurt if vegan)
  • juice of half a lemon
  • sea salt to taste
  • 1 clove grated garlic
  • 1 tbs olive oil
  1. Add all ingredients together and enjoy!
  2. It should be goo in the fridge for up to 2 days.
