Someone mentioned to me that she doesn’t know how she will stick to her healthy diet knowing that she can never ever have a banana split again. I told her she most certainly could still have banana splits and here is the proof!!!
I have ice-cream and banana splits often (and they aren’t even healthy ones) however I also make sugar-free, keto-friendly, paleo, vegan banana splits and these I can eat much more often and SO CAN YOU! Living a healthy lifestyle doesn’t mean depriving yourself, you just sometimes need to switch up certain ingredients.
ICECREAM INGREDIENTS
-2 cups full fat canned coconut milk
-1/3 cup monk fruit, powdered stevia, yacon syrup, honey or sweetener of -choice
-1/8 tsp salt
-1 1/2 tsp pure vanilla bean paste
-optional ingredients for desired flavor (I left mine plain vanilla)
-1 banana sliced (omit if keto)
-1/4 cup Lilys stevaia chocolate chips (melt in a small pan with coconut milk) to drizzle over icecream.
DIRECTIONS
Stir together the coconut milk, sweetener, salt, and vanilla bean paste. If you have an ice cream machine, churn using your machines directions. Or to make it without an ice cream machine, freeze the mixture in ice cube trays, then blend the frozen cubes in a high-speed blender such as a Vitamix OR thaw them enough to then blend in a food processor or regular blender. Eat as-is, or freeze an hour or so for a firmer texture.
